The harvest takes place between September 15th and October 15th, with a maximum yield of 80 quintals / hectare, while the maximum yield of grapes into finished wine is 70%.
The 100% Sangiovese grapes are harvested in crates, destemmed and softly pressed, following the traditional vinification with pumping over, punching down and permanence of the skins for 9-12 days to obtain a soft taste contained in noble tannins, a good coloring intensity and a structure ideal for aging.
Racking and aging in 7.50 hl French oak tonneaux for 6 months. Refinement in the bottle for at least 6 months.
