Soft pressing of the grapes through a pneumatic press under inert gas and separation from the skins. Fermentation at a controlled temperature in stainless steel and vitrified cement with selected yeasts.
In recent years a Batonage process has been carried out every 3 days on the lees for about 40 days. This allows for greater extraction of perfumes.
